Looking for a delicious, healthy, vegan muffin? I created these on a cold winter day in January when it was raining sideways with the fresh foot of snow from last night turning to slush! A perfect day to be inside creating a tasty treat : )

Ingredients:
2 tbsp Ground flax seeds
1/4 cup Water
1 cup Spelt flour
1/2 cup Teff flour
1/4 cup Rolled oats
1 1/2 tsp Baking powder
1/2 tsp Baking soda
2 tbsp Hemp seeds
2 tbsp Ground flax seeds
1 tsp Ground cinnamon
1/2 tsp Ground cloves
1/4 tsp Himalayan salt
1/4 cup Pumpkin seeds
1/4 cup Unsweetened shredded coconut
1/4 cup Avocado oil
1/4 cup Maple syrup
1 1/4 cup Plant milk
8 Dates, chopped into small pieces
1 cup Apple, chopped into small cubes
1 cup Carrot, shredded
Set oven at 375F.
In a small bowl add 2 tbsp ground flaxseed and water. Mix well and set aside. In a large mixing bowl add flours, oats, baking powder, baking soda and salt and mix well to combine. Add hemp seeds, the other 2 tbsp of ground flaxseed, cinnamon, cloves pumpkin seeds and shredded coconut and mix well to combine. In a medium mixing bowl add oil and maple syrup. Whisk together with a fork until well combined. Mixture should become a bit thick. Mix water/ground flaxseed mixture again to combine well. Then add to maple syrup and oil. Pour this mixture into large mixing with dry ingredients. Mix to combine slightly, then slowly pour plant milk in while mixing to combine evenly. Add dates, carrots and apple. Mix to evenly combine. Lightly grease a muffin tray with coconut oil. Spoon dough into muffin cups. Sprinkle shredded coconut on top (optional).
Bake for 30 minutes
Makes 10-12 muffins
