Winter green cabbage salad with an asian inspired dressing

This super tasty salad will surprise you! Loaded with nutritional goodness from all the cruciferous veggies and mixed with a delicious asian inspired dressing, you will want to eat this salad every week, I promise !!!

Ingredients:

1 1/2 cups brussels sprouts, shredded

2 1/2 cups white cabbage, shredded

3/4 cup chives, finely chopped

1/4 cup parsley, finely chopped

3/4 cup sliced almonds

1/4 cu sunflower seeds

1/4 cup pumpkin seeds

Dressing:

1/4 cup water

1/4 cup olive oil

2 tsp fresh ginger, finely chopped

3 tsp honey

1 tsp tamari

1/4 tsp salt

Mix first four ingredients into a large bowl. Roast nuts and seeds in a frying pan over medium heat until they turn slightly golden. Add to cabbage mixture. In a blender, add all dressing ingredients and blend until smooth. Add to salad bowl and mix until well combined.

Makes about 6 - 8 side salad portions or 3-4 main dish portions.

Prep ~ 10 minutes

Making ~ 10 minutes

Total time ~ 20 minutes

Keeps well in the fridge for up to 4-5 days.

Brussels Sprouts

This fabulous cruciferous vegetable is packed with so much health promoting nutrients you don't want to miss out not eating these!! Brussels sprouts are an excellent source of folic acid, vitamin C, vitamin K and beta-carotene. They are also a very good source of vitamin B6, thiamine, potassium and dietary fibre. Due to the high dietary fibre content, they are an excellent food to help reduce appetite, promote bowel regularity and help prevent colon cancer.
