This super tasty salad will surprise you! Loaded with nutritional goodness from all the cruciferous veggies and mixed with a delicious asian inspired dressing, you will want to eat this salad every week, I promise !!!

Ingredients:
1 1/2 cups brussels sprouts, shredded
2 1/2 cups white cabbage, shredded
3/4 cup chives, finely chopped
1/4 cup parsley, finely chopped
3/4 cup sliced almonds
1/4 cu sunflower seeds
1/4 cup pumpkin seeds
Dressing:
1/4 cup water
1/4 cup olive oil
2 tsp fresh ginger, finely chopped
3 tsp honey
1 tsp tamari
1/4 tsp salt
Mix first four ingredients into a large bowl. Roast nuts and seeds in a frying pan over medium heat until they turn slightly golden. Add to cabbage mixture. In a blender, add all dressing ingredients and blend until smooth. Add to salad bowl and mix until well combined.
Makes about 6 - 8 side salad portions or 3-4 main dish portions.

Keeps well in the fridge for up to 4-5 days.
